| Respiration rates of various geographical strains of Crassostrea gigas were compared to assess the respiratory expenditure as a physiological indicator of catabolism (cost of maintenance). Parental oysters, sampled in France (Marennes-Oleron), Japan (Hiroshima), Taiwan (Tunkang) and Spain (Cadix), were differentiated by both their geographic origin and by mitochondrial DNA markers, allowing the distinction between the two closely related taxa Crassostrea gigas and Crassostrea angulata. | L' apparition de phénomène de prédation des huîtres par des bigorneaux perceurs n'est pas nouveau. Elle a été régulièrement constatée par la profession ostréicole. C'est ainsi qu 'on a pu enregistrer une destruction massive des bancs d'élevage de la baie de Bourgneuf en 1938. Des problèmes similaires ont été enregistrés dans la région de La Rochelle et à Arcachon en 1932, où des subventions on été allouées pour le ramassage d'Ocenebra erinacea. Ces phénomènes étaient alors liés à cette espèce Atlantique. | L'affinage est une technique traditionnellement utilisée autour du bassin ostréicole de Marennes-Oléron. Son but est d' améliorer la qualité, tant gustative que de résistance des huîtres Crassostrea gigas. La grande diversité des sites, des claires et l'entière dépendance vis à vis des aléas climatiques ne permettent pas d'obtenir des résultats fiables et répétitifs. Cette phase finale de l'élevage se déroule en claires traditionnelles, renouvelées en période de vives eaux dans des proportions variables (0 à 80%). | Since 1988, seasonal, chronic mortality (up to 30-40 %) has been occurring at oyster farms in the Marennes-Oléron Bay, namely at the Ronce and Perquis sand flats. The particular geographic position on the southern part of the bay, between the Seudre River and the Maumusson Strait, confers a relative specificity to these oyster farming areas. Production in this area is on the order of 8,000 to 10,000 t of the 30,000 t of oysters produced annually in the Bay. Although limited in surface area (180 ha out of a total of 4,500 ha), this high proportion of production can be attributed to the fact that this zone is mostly dedicated to the finishing process before commercialisation. Due to its economic importance, oyster farming is vital for local businesses. |

| Summer mortality is an important economic concern for the Pacific oyster, Crassostrea gigas, industry all over the world and particularly in France. Outbreaks appear when oysters are in gonadal maturation. Bivalve defence mechanisms against pathogen invasion are assumed by circulating cells, the hemocytes. The tidal saline ponds on the Atlantic coasts of France were highly productive before being hit by two consecutive epizooties. Parasitic diseases were described on this species, both of them leading 10 economic losses, as heavy mortalities have usually been recorded before the oysters reach the commercial size. Four maturity stages were simultaneously obtained by diet and thermal conditioning (immature, low maturation, mature and post-spawning stages). | The study of sexual maturation and spawning in the Pacific oyster (Crassostrea gigas) is part of a vast research programme that endeavours to understand the causes of mortality that occur sporadically during the spring and summer seasons in the Marennes-Oléron Bay. Thermal and diet conditioning were used to obtain oysters at each stage of maturity simultaneously.
